Powters (Newmarket) - Pigolatas Chipolatas

Well, if I am to be perfectly honest these were an impulse buy as we needed some chipolatas, but I should have read the packaging and makings. We've eaten and enjoyed Powters products before and I had just assumed...yes, I hear you that you shouldn't assume anything...

72% pork meat as may be, but "beef protein casings"! We are not big on this type of skins for sausages and much prefer proper natural skins that we feel gives to make an altogether better sausage.

For information, we understand that artificial sausage casings can be made from materials such as collagen, cellulose, and plastic. Manufacture of collagen casings has been established for a while and are produced from animal collagen, mostly derived from processed hides of cows and pigs. Sometimes the bones and tendons are included which was unexpected information. This is beneficial to the sausage producer as it's an inexpensive choice of casings  compared to natural skins. The collagen casings are easier to use than natural casings as they provide better weight and size control for the sausage production. This means that any produce is a regular consistent size and weight. You'll see the difference when compared to local butchers made in the shop sausages with natural skins which are hand tied and linked, and that each sausage can differ slightly both in size and weight.

They cooked up OK, but as we've seen many many times, the skins go soft and rubbery when fried, and start to split and peel.

Perhaps I'm being too harsh, yes they tasted OK but a bit bland. The seasoning was woefully under done in our opinion. When cold the sausage was rubbery and uninviting. If honest, I bit one and threw the remaining piece in the bin. 

We gave 2.5 banger marks as these sausages are certainly edible, but in our opinion way way off a decent chipolata.

Definitely something I will stay wide of purchasing again.

100x18mm before cooking, 100x17mm after.
29g before cooking, 22g after.
That's a shrinkage of approx 5% & weight loss of approx 20%.
12 chipolatas in a 340g pack at £3.50 (£10.20/kg approx)

Pork (72%), Water, Rusk (Wheatflour, Water, Salt, Raising Agent E503), Salt, Spices, Herbs, Preservative (Sodium Sulphite), Emulsifier, Lemon Juice Powder, Beef Protein Casings.
