Totham Bangers - Pork & Guinness

Totham Bangers of Great Totham (nr Maldon) sell their produce via farmers markets and farm shops such as the excellent Poplar Nurseries at Marks Tey near Colchester where we picked up our samples again...

These 85% pork sausages in the raw looked very good I must say, so although we hadn't intended to purchase some today we just couldn't resist! The labelling appeared much better this time and we see that there's actually 6% Guinness in these too, so wasting no time when we got to granny's in Suffolk, in the pan they went.

The natural skins worked well browning nicely and the medium coarse texture and a good succulence from some good quality pork, was commented on by all. However none of us could get the Guinness. The taste was very good but it wasn't what we expected as it was lacking some of the depth of flavour that surely the Guinness would certainly have brought. Perhaps a tad more of the black stuff would be the way to go...

Now in honesty, Granny did like them and I should add, so did we, but we had to mark accordingly given the slight disappointment on the depth of flavour!

A good well made sausage, a bit pricey, but certainly worth a try.
