Totham Bangers - Pork, Chorizo & Olive

Totham Bangers of Great Totham (nr Maldon) sell their produce via farmers markets and farm shops such as the excellent Poplar Nurseries at Marks Tey near Colchester where we picked up our samples yet again. I see a habit forming here...

These 84% sausages in the raw looked really interesting.  Hmm we pondered, olives in sausage, buy some...

Ok we get excited about new flavours and certainly the introduction of olives took our fancy.  We've tried Totham Bangers before and found them very much OK. Never a top sausage from the variety we've had to date but these Pork, Chorizo & Olive looked just as good in the pack too as the other examples purchased. Let's face it, 84% is a fair meat percentage to be sure, so as soon as we got back to the office from Granny's in the pan they went.

The labelling appeared much better again this time so we won't harp on about the lacking information on the packet before.  5% chorizo, together with 3% olives stated in the ingredients along with the pork and bit of preservative plus salt and pepper. Looking good so far we pondered...

The natural skins worked really well.  No splits or bursts, browned nicely and the medium coarse texture and a good succulence from what appears to be good quality pork. However with only 5% chorizo, it looks like you may need a touch more to really get the flavour across to be honest, and the olives may have been somewhere but I didn't get them at all unfortunately.  Yes there was a slight saltiness, which could be the olives perhaps?  Yes the taste was very good but again there was disappointment as it wasn't what we expected.

The texture was just under medium and was very good.  Succulence very good too. So it's a shame to appear to knock a very well made and potentially interesting flavour combination sausage.  However given the weight loss during cooking at close on 18%, and the 13% shrinkage, with a £10.90/kg price tag to boot, consideration in buying some more of these may be questionable.

A good well made sausage though, albeit bit pricey, so if you fancy trying these, it's entirely your call!
