AJ Coulson (Dunmow) - Traditional Pork

As we've said before, good butchers and sausage makers are definitely found in Dunmow, Essex, you heard it here!  AJ Coulson's (previously known as Stokes) is just one such...

We bought some really good looking traditional porks along with some reggae sausages which were top notch, on our last visit to Dunmow. 

These traditional pork sausages are over 80% meat we're informed, very good quality cases and look really good in the raw.  See photo below, as presentation does really matter.

Now in truth we cooked up the traditional porks AND the reggaes at the same time (separate pans of course) and had a monster sausage & mash meal, trying both types of sausage. 

These traditional porks although they had a small amount of shrinkage did have a very pleasing mild flavour, medium texture and a reasonable bite. I liked them a lot, but comments here were that they were a bit too meaty and chewy compared with the reggaes.  Mind you, each to their own.

Eaten cold the next day... excellent!  Better than the reggaes!

I really must thank Mrs J for her recommendation we try AJ Coulson (previously Stokes) as these too are a really good sausage.

Here's the sample details:
110x30mm before cooking, 100x30mm after.
75g before cooking, 63g after.
That's a shrinkage of approx 9% & weight loss of approx 12%.
6 loose sausages £3.40 (approx £7.60/kg)
