I'd seen some online advertorial recently about Heck sausages and whilst cruising the meat aisle at our local Tesco, I spotted the bright packaging clearly labelled Gluten Free. We're going in!
Now at 97% shoulder (British Pork) I was a tad suspicious that these cooked up would be quite firm. As it happens they weren't overly firm, but they did give a good chew with a snappiness of the natural skins. The texture was quite close though, and given that high percentage meat content sausages can tend to be dry-ish, in this case, retention of moisture and succulence was quite good.
We'll take the producers word for being gluten free, however we note from the ingredients that there's no rusk, bread or similar included so that's good, but there is "cream powder (from Milk)" listed as a potential allergen. I will ask my client her view on this and her particular diet in due course.
Flavour-wise though (being honest) we were more than a bit disappointed as they lacked in our opinion a enough spice and seasoning. You ate, you finished, and no enjoyable lingering taste of the sausage? Very meaty OK agreed but please don't get us wrong, these appear to be a very well made sausage but sadly just let down a little by the mildness flavouring.
We'd go for these
as an "everyday sausage" for sure though.
Would we buy again...perhaps.
