J Phillips (Theydon Bois) - Old English

Theydon Bois village has indeed not one but two, very good butchers shops located very near each other both producing excellent sausages...

I called in recently in an effort to correct an oversight in not knowing of both shops and picked up some chipolatas and some Old English from J Phillips on Coppice Row, Theydon Bois, Essex.  

75+% meat we're sure (remiss of us not to ask at the time) in good quality natural casings.  A good looking substantial log of a sausage in the raw.

Cooked up, these are really very very good. Yes Ok they lose a bit on cooking, but remain very succulent, and just meaty simply would be an understatement. In fact the quality of pork and the medium course texture was superb. An excellent bite and chew.

These Old English sausages from J Phillips brought a smile to my face when we tucked in to them as part of our sausage and mash.  So don't miss out on these, get some and try them yourselves...

130x32mm before cooking, 125x30mm after.
100g before cooking, 83g after.
That's a shrinkage of approx 9% & weight loss of approx 17%.
