J Phillips (Theydon
Bois) - Chipolata
We are always
on the look out for new sausage
sampling opportunity and how I
missed the fact that Theydon Bois
village has not one but two, very
good butchers shops I just don't
know...
Well in an
attempt to correct this oversight on
our part I called in recently and picked up
some Old English and some very good
looking chipolatas from J Phillips
on Coppice Row, Theydon Bois, Essex.
70+% meat
we're sure (remiss of us not to ask
at the time) in good quality natural casings. Now these
cooked up really, very well and
proved to be a succulent, meaty and
herby sausage
experience. Flavoursome and
satisfying we all agreed.
A good bite and a medium/smooth texture.
Not as cheap as chips, but a very
good sausage that's up there with the best
tasting chipolatas we've found to date.
The Old English review will no doubt
follow shortly and if they are of
the same stamp as the chipolatas,
well....

sample details:
125x20mm before cooking, 112x18mm
after.
38g before cooking, 31g after.
That's a shrinkage of 8% & weight loss of approx
12%.
