We received
an email message recently that
pointed us towards The Meat Shop in
the Pavillion at Waltham Cross,
in Hertfordshire.
Sausage
tip-offs always gratefully
received...
Our informant
(Paul from Cheshunt) suggested that
we would be impressed. So with
some interest I made the trip over
to Waltham Cross to find the shop
and give these a try!
Now at 125mm long and weighing in at
108g uncooked, these cumberland
sausages are indeed on the big side!
Not a bad looking sausage in the raw
I will say although they did feel a
bit baggy skin-wise and the contents
a little soft. Around 80% meat
though so on to the sampling...
Now even cooked carefully we had
some big time sausage eruptions at
the ends and some major splits!
We do take care to cook our samples
consistently, but the skins let the
side down. Natural skins but
they just didn't work for us to
retain the contents unfortunately
with one sample that ruptured so
badly almost turning itself inside
out. Taste-wise rather quite
mild. The texture was OK
though and the bite too quite
reasonable.
Just an OK sausage, and nothing
exceptional. Expectations were a bit
dented unfortunately. Sorry
Paul, not something we would buy
again!
HOWEVER...we also bought some
LOUISIANA sausages from the same
shop...now these were very nice, and
the butcher there said he liked
these too...our review will follow
shortly!

125x32mm before cooking, 120x31mm
after.
108g before cooking, 96g after.
That's a shrinkage of 7% & weight
loss of approx 11%.
We will check prices again:
