The Meat Shop (Waltham
Cross) - Louisiana
We were initially prompted
by an email message that
pointed us towards The Meat
Shop in the Pavillion at
Waltham Cross, in
Hertfordshire. Sausage
tip-offs always gratefully
received...
We had
visited to pick up some
cumberland bangers but while
there we also bought some
LOUISIANA sausages which
looked very nice in the
display cabinet...and with
the butcher there saying he
liked these too...say no
more!
Now they were
quite soft in the raw state
like the cumberlands, which
was a bit off putting, but,
they cooked up completely
different to the cumberland
samples to be honest. No
eruptions from the ends and
good even natural skins that
browned nicely and only
suffered with very minor
splits here and there.
Slight orange residue in the
pan, probably from the
chilli/ flavouring escaping,
but a good aroma all the
same.
Taste-wise the
immediate chilli was there
as you would expect from a
sausage called a "Louisiana"
which intimates it's got
that "creole" and southern
USA states style of
flavouring. Oh yes, after
downing a couple, the chilli
tingles build nicely on the
lips and provides a warming
result. Not too hot though,
however the most notable
thing with the taste was the
DEEP smokiness that made
these different to just a
chilli sausage!
The
texture was good and the
bite too quite reasonable.
Meat percentage we would say
comparable to the
cumberlands. Weight loss and
shrinkage were to a minimum,
which was good too.
The troops here gave a
thumbs up and voted the
Louisiana a "a proper
sausage". Certainly
something we would consider
buying again! ...
