- Pork Sausage
We like a
plain pork sausage it is true. Sometimes the
more powerful flavours that are used can be
somewhat off putting and not appeal to
everyone...come on Stephens let's see what
you can do...
70%+ good quality pork meat in natural skins
and looking pretty fine in the raw is a good
start then. Cooked up and browned nicely,
another plus. A smooth close texture but
still managing to retain good succulence
another plus. You can see the way this is
going perhaps...but, and there's always a
but...unfortunately a small piece of bone in
one sausage that was bitten on and crunched
shocking one of the team, may be a show
stopper though? We know this can happen, but
it shouldn't should it?
A real shame as the flavour was meaty
without being over the top, and with a touch
of seasoning to give you that slight
lingering taste on the tongue. Minimal
weight loss and shrinkage. A very good bite
and chew.
The sausage and mash we used these in went
down well, even with the teeth on bone
incident. !

after.
97g before cooking, 92g after.
That's a shrinkage of approx 0% &
weight loss of approx 5%.
