Oxhey Lane Farm Shop (Pinner) - Pork

We were right impressed with the PORK & CHIVE from Oxhey Lane Farm Shop in Pinner...so here we go with another variety...introducing the PLAIN PORK...

Jon Wiggett is an enthusiastic producer who runs the farm shop at Oxhey Lane, Pinner.  He tells us he only uses good ingredients such as hand & belly and natural casings, and the flavourings too are his own, mixed in house to the "secret" recipes that have been handed down "father to son" by Jon's dad.

75-85% meat (dependant on the recipe) in the mix go in to natural casings with some rusk and flavourings and that's it!  I spoke to Jon on the telephone just after we had sampled the CHIVES and he said quite boldly that "you wont get fat out of our sausages".  Well he's right, no residual fat in the pan for those CHIVES, or in fact the PLAIN PORK we've just sampled.

These plain porks are again a "big bold sausage" averaging 125mm long and weighing in at around 105g. A good succulent bite with a medium texture.  Nice herby flavour and lingering spice.  Personally, just how I like them.  Certainly yet another blooming good eating sausage from Jon Wiggett.
