We bought quite an amount of sausages
in two big taster packs.
The taster pack labelling
unfortunately was a bit sparse and didn't have much
detail on individual makings which
was a shame, however please be
assured the quality of the sausages
was not in question.
Beef, pork and plum sounded pretty
interesting. Beef sausages can
sometimes cook up a bit dry and
solid, and pork sausages
can cook up a bit rubbery if minced
too fine, but mix beef and pork
together and you can get a really
interesting texture. We've
tried this combination before from
another supplier/producer which went
down really well. However
we're not sure as to what the
percentage of beef or pork that was
used in this particular mix and we
will ask the question when next over
to the farm.
The raw sausage doesn't appear too
dark so we would say that these
sausages may be rather more pork
than beef.
Cooked up these sausages did firm well
and retained a good amount of
succulence. Good skins noted,
with no splits or bursts. We were
expecting the typical
"burger in a sausage skin" flavour,
but this wasn't the case which would
point towards what we believe them
to be more pork than beef...
Taste-wise not bad at all but we all
agreed they could do with a little
more seasoning. The plum
flavour was also very minimal, yes
it was there but a little more could
make a real winner out of these.
Eaten later when cold, the sausages
had firmed further and to be honest
made for a good bite and chew.
As with many the other Jimmy's
Farm sausages, these are a very good, well
made sausage, we all agreed.
Would we buy again? Well with
a bit more seasoning, yes
we would...
