Heaps (Greenwich) - Original Recipe No1

I've been meaning to get some sausages from Heaps to try for some time now. I know that you can pick up the Martin Heap recipe sausages from Waitrose (Simply Sausage packaging) but I wanted to try the shop made ones. 

After a drive to Epping station then on the Central Line and the Docklands Light Railway (DLR) to "Cutty Sark" station, Heaps is "just round the corner" in Nevada Street.

Heap's retail shop-made sausages and similar meat products, as well as operating a café offering sausage based foods (sausage and mash, hotdogs etc), some pastries, with teas and coffees etc.. In fact through the glass panels at the back of the shop, you can watch the sausage making in progress.

The Award Winning Smithfield Original Recipe No1 is made of 88% pork, with nutmeg and a hint of white pepper in natural skins. This recipe we're told hasn't changed since it was first perfected by Martin Heap at his gourmet London sausage emporium.

Whist in the raw they looked good but on cooking unfortunately we had a real problem with all the sausages in as much as they all suffered bad eruptions from the sausage ends. Almost like the skins really shrunk down, shortened and pushed the filling out which became detached and loose in the pan.  Shame because the flavour, texture and succulence was very good all the same, but we all agreed not as good as the Heaps Breakfast recipe.

That's a shrinkage of approx 6% & weight loss of approx 15%.
