Church's - Cumberland Chipolata

Well what a great little sausage these are! Church's of Epping sell some good sausages we were told again and again. The Cumberland Chipolata is definitely one of these.

Yet another friend raved about Church's and recommended these little beauties.  A small sausage weighing in at 28g and 20mm thick with 66% meat, but as we all know size isn't everything!  

These darlings may have a medium bite, with a medium/coarse texture but the flavour is excellent. There's a good amount of seasoning and this produces a really pleasant lingering taste.  After the slight disappointment of the Old Epping's, these have certainly made up for it!

A great breakfast sausage for sure.

100x20mm before cooking, 100x18mm after.
28g before cooking, 23g after.
That's a shrinkage of approx 10% & weight loss of approx 18%.
