Black Farmers - Pulled Pork

Given the prevalence of a multitude of "pulled pork" products you see these days, we thought we ought to give them a try. 

We've sampled Black Farmer products before and found them to be a good example of a supermarket packed sausage.  Certainly 70% outdoor bred freedom pork with 10% pulled pork in natural pork casings sounded very much OK to be honest.  "Gluten Free" too we noted on the pack as with other Black Farmer sausages.  The package description also says "sweet and succulent" with "generous pieces of smoky barbeque pulled pork". 

Well as I was snipping to separate the sausages, I noted a very firm lump in the side of one sausage. It was a bit off-putting, and I had thought it felt like a large piece of gristle or bone.  On inspection it turned out to be a very large, firm piece of pulled pork weighing in at 4g! 

Cooked up the skins worked well and browned very nicely.  However on sampling we noted that any similar large pieces of pulled pork were not evident in the other sausages so the big piece we found may have been an error in the making.  In fact we did find a fair sized lump of gristle in one, but the pulled pork or in fact "smoky barbeque" flavour itself wasn't really that obvious!  (See photos)  Texture-wise medium -ish! 

The sweetness also wasn't consistent throughout the sausages which would imply that the mixing may need further attention.  Don't get us wrong these are a fair tasting sausage but not quite to our liking and somewhat disappointing.  An OK sausage yes but perhaps not something we would buy again.

100x28mm before cooking, 100x28mm after.
68g before cooking, 61g after.
That's a shrinkage of 0% & weight loss of approx 10%.
6 sausages in a 400g pack £3.20 (£8.00/kg).
