Salter & King (Aldeburgh) -
Aldeburgh
We
were impressed with Salter &
Kings Rustic Italian, so,
with our travels somewhat
curtailed, we took the
decision to order online and
arrange what must be a 80
mile delivery for our
sausage fix this time...
OK rather expensive for just
a couple of packs of
sausages and some bacon, but
believe me when I say it was
worth the cost as we enjoyed
every bite. Yeah, alright it
was an extra tenner for the
P&P but if you order by
midday you'll get your order
by 4pm the following day.
See their web site for
deliveries. For a big order,
they'll deliver for free!
Well our delivery arrived on
time still chilled in a
substantial cold packed box
so no messing there!
Salter & King have shops in
the High Street, Aldeburgh,
and The Causeway, Peasenhall. They have
a "promise" to their
customers that includes "to
sell only the very best
pasture-fed and
additive-free meat, and to
source all their meat from
free-range, organic and
small scale farmers who use
natural farming methods that
actively encourage the soil
and surrounding countryside
to flourish". This quite
honestly is right up our
street!
I won't copy here what's on
their web site about their
ethic, we'll put a link
below so you can look see
for yourself. Suffice to
say, we like what we see...AND
the fact that they use local
Suffolk suppliers such as
Robert Simonds’s farm in
Oxburgh for the pork is top
draw!
Now the Aldeburgh Sausage. A
80% meat handmade Salter &
King own recipe, in natural
hogs casings and all hand
tied at the Peasenhall shop
we are informed. Apparently
the first sausage flavour
made when the Aldeburgh shop
opened! A course meaty
texture, and according to
the labelling, with rusk,
coriander, mace and white
pepper. Well, they certainly
do look good in the raw!
There's only two of us here,
hiding away from it all at
Sausage Review HQ at
present, so only four went
in to the pan for a sausage
and mash supper, and the
other two I kept back for my
personal lunch tomorrow!
The sacrifices we have to
make to bring you these
reviews!
An
excellent flavour with yes a
course texture but not one
of those crumbly fall apart
sausages. A good bite and
chew, and the natural skins
worked well containing the
meat and juices perfectly.
No splits or bursts, and
certainly absolute minimal
residual oil left in the
pan. Shrinkage and
weight loss was noticeable
unfortunately but this
shouldn't detract big time
as these are a wonderfully
satisfying sausage delight.
Incidentally we also bought
a large(ish) pack of Dry
Cured Oak Smoked streaky
bacon too...blooming lovely!
