We'd been
tipped off that we could get some
real Lincolnshire sausages from
Borough Market in London. A
bit closer for us than Lincolnshire
so on the train again and in to town
it is...
These BOSTONS are a very traditional
Lincolnshire sausage, and are
Bostons Sausage's flagship made to a
secret recipe, with a minimum of 80%
pork, breadcrumbs, sage and
seasonings. They are a best seller we're
told by the very friendly Sam we met
at Borough Market.
Boston Sausage sell from their
premises in Boston and also have a
market stall offering cooked product
and fresh. We really enjoyed
the visit to Borough especially at Christmas
market time...
In the raw these Bostons look pretty
good with quite a defined fleck of
colouring. Good skins too.
Cooked up they performed very well
and tasted very different to "lincolnshires"
we've had before. Quite a
loose texture and "bready", although
eaten cold this loose texture had
tightened and they ate very well.
Good flavour, although not perhaps as
"sagey" as we were expecting...
We included a few here in our 2013
sausage fest and the Bostons came
out joint top of the presented
sausages in a group tasting.
