Kings (Stansted Mountfitchet)
- Pork Chipolata
We'd picked up some Gloucester Old Spot porkers
which we've written about
previously, and on another
visit to Stansted M/F I
called in to King's in Lower
Street again and picked up some very
good looking chipolatas.
We like chipolatas.
They're not just kids food
you know...
We gauged these meat-wise at
least at 70%-80% similar to
their big brother porkers,
perhaps minced a tad
smoother though, but good in
well filled natural sausage
cases. A little shorter in
length than some at 95mm,
but that's OK. They
still looked very good in
the raw.
Cooked up we didn't see any
of that pale ooze from these
sausages as we'd seen with
the big porkers.
Perhaps a slightly different
mix being used here. I'll
need to ask next time we're
in the shop...
Weight loss
at 13% was not bad but
shrinkage was unfortunately
at 13% too! The
texture was on the smooth to
medium side, and in the
"sliced" photo you can see
it's a good mix.
A good taste though, but the
skins were a bit "rubbery".
Snappy skins on chipolatas
is what we like but hey "call us
fussy". Seasoning-wise
not to dusty. Eaten
cold later on, not bad at
all!
Would we buy these
chipolatas again? Probably
yes.

90x22mm before cooking, 90x20mm
after.
30g before cooking, 26g after.
That's a shrinkage of approx 13% &
weight loss of approx 13%.
