The 68 mile round trip just to get
sausages may have been in normal
circumstances just a bit too far but
calling in on the way home from
family in Thurston near Bury St
Edmunds made it a goer!
Really friendly butchery staff
greeted us and
it would be fair to say shopping
here was a good experience.
In the raw these Venison & Porks looked
very good! 70%+ meat we're
informed in nicely filled skins.
Again like the Fen Dittons, they're
quite a small sausage in the raw,
but cooked up they browned really
well and the medium texture was
excellent.
A touch of residual oil in the pan
which we we would expect and have
seen with other venison / pork
mixes.
The natural skins
gave a good bite and the
meaty firmness was very good too.
The flavour good,
there was a lingering spice
on the palette, which we were hoping
for.
A
very good sausage made from prime
free range pork and locally sourced
venison which we would buy again.
Minimum shrinkage and reasonable
weight loss.
You won't go wrong with these
sausages either. You heard it from
us!

sample details:
105x27mm before cooking, 100x27mm
after.
59g before cooking, 54g after.
That's a shrinkage of approx 4% & weight
loss of approx 8%.
An epic fail as we didn't get
prices! Must do better next time!
