The packaging
indicated "Specially selected cuts
of prime British pork". In fact 85%
pork shoulder and belly, in natural
pork casings. Well in the raw
they look pretty good, and in the
pan they did cook up and brown very
well. No splits and next to no
fat residue left behind. Minimal
shrinkage and weight loss which is
good, but on inspection you could
feel that these sausages were not
that firm as some we've tried.
OK on slicing, the meat inside was
solid and well mixed but with a
quite light smooth texture. On
the bite though the skins were a bit
chewy and although quite succulent,
they didn't really hit the mark.
Shame but not what we would call
exceptional unfortunately. Yes
the chilli was up front and pleasing
but the lime, garlic, coriander and
oregano...hmm?...not sure I could
even taste them.
Now I'm not "dissing" these, but
they're only an OK everyday sausage
if I'm honest...sort of really
nothing to write home about, but
trust me, I'd buy some more.
Perhaps a pack or two for BBQ time!
