Brookfield Farm (Aston) - HertBeat
We originally found out
about this farm butchery
from friends from Dane
End, Hertfordshire. They had raved
about the excellent produce
from Brookfield Farm specifically their sausages,
but did say I may need the
sat-nav if I was thinking
about visiting the farm
shop...
As it happens I did need the
sat-nav then as I did
recently. The farm shop is
tucked away somewhat on the
quite narrow Aston End Road,
Aston, Stevenage. Look out
for the water tower as you
get nearer. Thankfully
there's still ample parking
opposite the shop.
So 75% own farm free range pork in
quality natural skins
containing red onion
marmalade (or as the butcher
informed us, they also refer
to it being a chutney) and cracked black
pepper. Ooh err!
In fact this sausage was
judged by Noddy Holder (of
70's pop group Slade fame)
to be the East of England
Legendary Banger 2011.
AND the HertBeat sausage was
a finalist in the 2012
Champion of Champions! Blimey old Riley!
Cooking up, the aroma from the
pan was very good. The
skins performed well and we
didn't see any nasty splits.
The sausage cut easily
without the skin tearing,
and revealed a good
medium texture with
excellent succulence.
I was expecting a bit of
burnt residue in the pan
perhaps from the marmalade/chutney
cooking out with the juices,
but nothing to get anxious
about.
A good looking and tasting
sausage to be sure with
a little shrinkage and weight
loss in cooking but the quality
of the pork from
Brookfield's own pigs is top
notch and the seasoning very
good. The red onion
marmalade I'm sure
helps the succulence, and
the cracked black pepper
gave a little buzz to the
tongue. A slight sweetness,
perhaps? The red onion
again? Nice!
As a
combination of flavours yes
I'd agree this works well.
Eaten cold later, you may
think a
tad sticky perhaps, but no.
I must say
these HertBeat sausages will
be something I'll definitely
buy again.
