Becky's Butchers (Gt Bromley, Essex) - Best Pork

We took a drive over to see some friends and met them at Wivenhoe, just inland along the river from Brightlingsea, Essex. Found a really nice deli in the High St. They had local sausages in their display. Say no more...

Becky's Butchers is on Badley Hall Farm, Great Bromley near Colchester, Essex and is run by Becky herself on the families farm. Reading from their web site and searches, Becky's Butchers opened in January 2017, offering people with livestock the chance to have their meat butchered to the highest standard. In 2021, Becky won the Rising Star award and she has been shortlisted for the Meat Businesswoman Award in 2025. She was also a finalist in the Butchers, Deli and Farm Shop Awards in 2025. 

Although beef and lamb is produced on the farm, the pork we're advised comes from east coast Suffolk based Dingly Dell Pork. We read that these sausages are made with only the best cuts of pork, and are seasoned with just a little salt and pepper. They are handmade on site using natural hog casings. They have wheat rusk in them, so are unlikely to be gluten free. Why they feel it's necessary to use flavour enhancer (E621) in the mix, we're not sure, but we will ask.

So nice to see decent sausages in natural skins though. You know our views on those sausages in their collagen tubes!

Now, these sausages did see the inside of our deep freeze for a while we will admit. We had a shed load of samples arrive and it's a struggle to cook, eat and write about such, but then again somebody has to do it!  Anyway, they thawed out and look very much OK and none the worse for their -18 degree enforced stay.

Becky's Butchery compete regularly at Harwich Sausage Festival, which they won with their Pork and Leek sausage three years in a row: 2018, 2019, and 2020. They were crowned the overall Champion in 2018.

In the 2020 at Meat Management awards evidently, their Best Pork Sausage was "Highly Commended", so we'd best get them in the pan and underway then...

Cooked up they browned really well. No splits from what seemed fairly decent skins by the way. No extra oil noted in the pan other than what we put in to start with and definitely none of that pale ooze we've see on quite a few examples of less than best sausage.

A good medium texture here with a not bad at all succulence. The skins cut OK but the bite and chew was not quite as good as we hoped. The troops commented that the cooked skins seemed just a little tougher than expected.

However, the taste with a zing of pepper was very good. Simple seasoning does work.

All in all a pretty good everyday sausage we'd hasten to say. You wont go wrong with these.

Would we buy them again. Yes for sure.
