On route home
from Cambridge, and avoiding the
madness and spray on the M11, I
found myself in Linton...Hmm...I
wonder if there's a butchers shop
coarse there is. I'd seen
reference to Ashcroft & Sons of
Linton on the Blythburgh Pork web
site. Now what I hadn't realised
though was, Rob Ashcroft and family
have not long started their butchery
business and the shop is only
recently established (late 2013).
The place is spotless, with all
shiny new display cabinets, smart
decor and the butchers blocks are
like pristine! It's a smart modern
looking butchers if ever I saw one!
Matt, one of Rob's sons served me
and I picked up some Linton sausages
for our next sausage review that I'm told are
made from quality free
range Suffolk pork. I did say I would be
presenting these to the troops in a
few days, but I was so impressed
with Rob's enthusiasm, I wasted no
75%+ free range, Blythburgh pork in
quality natural skins. Not too
tightly stuffed and good looking in
the raw I will say! Now these have a
more or less standard seasoning, but
Rob does add a touch of coriander to
this to make them in to Linton's
They cooked up really well with
lovely biting skins and an excellent
medium/smooth texture. No additional
residual fat in the pan and minimum
shrinkage make for a big thumbs up
from us. The meaty flavour and
succulence was as far as I'm
concerned spot on. In fact on eating
the first, you would surely want
another, and then another!
We're talking seriously proper
This is yet another small high
street business retailing really top
quality produce and raising the bar.
The big "manufacturers" need to take
Oh why do we live 22 miles away. I
only bought six Linton's to try and
I'm having withdrawal already...and
there's none to try when cold later.
to buy some more! Next time, a
big bag for the freezer.
Now nearly forgot, there's a small deli section
too, so if you're making a visit,
make sure you have a look see!
