Knebworth Pork
You may know Knebworth for
the nearby Knebworth Park
that is internationally
known as Britain’s largest
music venue, and the British
home of classic rock. Since
the 1970's Knebworth House
has held rock concerts at
which the greats of rock,
jazz and pop have all
played. Knebworth Park as it
happens also hosts a very
good Christmas market event
too...
Trussell's the family run
award winning butchers shop
has been in the village for
over 120 years.
To make their sausages
Trussell's use Blythburgh
free range shoulder of pork,
breadcrumbs, natural
seasonings and proper
natural sausage casings!
Blythburgh Pork, are a very
well respected supplier
based in Suffolk. I have
previously read that the "Blythburgh
pig is born in a straw
filled farrowing hut located
on the sandy earth of the
Suffolk heritage coast. Its
mother has a free range life
style with the choice of
being outside if it
sunbathing weather or
staying inside if it’s
raining. Really being free
range is as simple as that
really, it’s giving the pig
the freedom to choose to go
outside or not." (extract

site) So animal
welfare is excellent we are
told.
These Knebworth pork
sausages are large at 140mm
(but do vary a tad in size
as they are hand made and
tied) and do look excellent
in the raw as it happens. So
they should too with 92%
pork. The makings whilst
with a very mild seasoning
do include rusk (containing
wheat flour etc.) though so
may not be suitable for
those with a gluten free
diet unfortunately.

Cooked up, good natural
skins, no splits or bursts,
and nicely browned. A little
bit of shrinkage, but a
noticeable weight loss
though unfortunately. Not
very much leakage of oil in
to the cooking pan, so not
entirely sure where the
weight loss has come from.
Texture-wise, definitely
medium, as the meat was
minced twice this is what
you would expect. Reasonable
succulence and the bite and
chew that were very good.
However, we did find them a
little over salted. A shame
I know, but, we as a family
don't use much salt in our
cooking, so we may be
noticing the level more than
other people and we'd of
course be interested to know
if others find the same.

Suffice to say though, these
Knebworths are a very well made
sausage at a reasonable
price that you really ought
to try yourselves.
Would we buy them again? Of
course, yes!
