Sometimes we
do get sausages passed to us for our opinion
by businesses and in this case from good
friends who had tried and liked them enough
to bring them to our attention. Free
sausages are always welcome of course!
However, "Boar" always brings to mind a
strong flavoursome eat that strikes fear in
the minds of two of the team here...and so
without further ado...
Unfortunately we are without some basic info
this review as the questions weren't asked
at the time of purchase and with a bag of
loose "snorkers" with no labelling, it will
be difficult. I can't criticise as "most
people" probably wouldn't ask the detail
that we do. So missing the source of meat,
the percentage of lean, the source of
casings and whether the butcher was left or
right handed aside...I jest about the
butcher of course...we'll do our best to do
these not too dusty looking sausages an
honest review.
From the look, I would say that the meat
percentage was fairly on the high side.
Cooked up the natural skins were indeed very
good and apart from a couple of little
splits, the innards were well contained. We
did however get some burnt liquid in the pan
resulting in a little stickiness and crust.
I suspect that this may be the apple
ingredient caramelising.
They cut OK which was pleasing as some
sausages we sample, the skins are quite
"rubbery" making them tear rather than cut
clean. Quite a good chew too but the flavour
was a touch surprising. With "Boar" as a
title, there wasn't that very strong "porkiness"
we expected. Frankly really strong flavoured
pork doesn't go down that well here with a
couple of the team, so the medium textured
not so strong flavour got the thumbs up. We
felt though the apple content could have had
just a touch more impact. It was OK, just
needed a bit more. Whereas the other
seasonings were just about right.
Weight loss was interesting. Moisture and
apple ingredient loss may account for this.
I will enquire when next able to as to
whether the apple ingredient was fresh apple
or desiccated.
In a hot dog roll though with a daub of Dijon,
these were gone in no time!
Next time we are over to see our friends, we
will drop over to the shop in St Osyth, and
see what other delights they have on offer.
