Sausage Review - we review sausages

Staying at our daughters in Devon we had the opportunity to call in to the Coleman's shop close to the harbour to not only sample their extremely good pasties but now a few pork chipolatas for our late tea...

Chatting to the butcher, it appears that being a Devon located business selling Cornish pasties didn't go down that well with the locals what with the county rivalry...so they be Devon pasties now of course!

PW & J Coleman is a well established butchery which opened it's doors in 1981 and boasts 5th generation butchers in the Coleman family utilising meat locally sourced from both Devon and Cornwall. Sausages made daily they say. "I like this place".

We like chipolatas as you may have guessed by now and these minimum 75% meat within natural sheeps casings from Coleman's are no exception.  The pork is minced well, and the skins are good quality and it's obvious care has been taken to produce these good looking chipolatas.  We picked up a good bag full all nicely tied in that traditional sausage string way...nice!

Cooked up we saw nicely browned skins, with no splits and a smooth-medium texture and a good bite and chew. The flavour was very good once again.  Just enough seasoning and that nice lingering spice taste on the tongue afterwards.  Snappy skins?  Yes of course...we like these chipolatas!

Minimum shrinkage and weight loss which for a thin chipolata is essential. 

Would we buy again, yes of course.  Worth popping in to Salcombe to get sausages and pasties from Coleman's if nothing else!

120x20mm before cooking, 115x20mm after.
49g before cooking, 43g after.
That's a shrinkage of approx 4% & weight loss of approx 12%.
12 loose sausages (598g approx). £5.80 (£9.70/kg).
