P&M Sausages (Leyton E10) -

In a conversation with one
of my business customers,
who as head chef at a very
good London restaurant I
would consider he knows a
thing or two about food,
suggested we should try
these P&M sausages.
He had said that he had
struggled to find a decent
textured sausage, so I
suggested that we did a
“swap”. I’d drop him off a
pack from our go to supplier
and he would get us some
from a supplier that he had
used for years, even at the
previous restaurant in
Chigwell he worked. I must
admit I did feel a bit
awkward when we exchanged
goodies though as I had for
him a six pack and he gave
us a big catering pack
containing a whopping 18
bangers! I didn’t see that
one coming!
P&M are based in Marsh Lane,
Leyton E10, east London and
supply restaurants, catering
establishments and eateries
with a variety of sausage
delight. Their production is
over two sites, one in
Leyton and the other St
Neots, Cambridgeshire, and
notably have supplied the
House of Lords and the
Commons. P&M’s Cumberland
sausages also made an
appearance in the BBC’s
Apprentice programme with
the teams tasked with making
best quality sausages. P&M’s
were chosen as an example of
a quality gourmet sausage
with a high meat content.

The Cumberlands we sampled
are the “award winning”
traditional sausage they
produce with a herby flavour
and a slightly coarse
texture. Certainly at
minimum 72% pork in natural
skins they do look very
good.
My chef contact prefers to
cook these sausages in the
oven he tells me but we pan
fried to be consistent with
all our other sampling. We
also passed on half a dozen
of the same pack to another
family member to try
separately which got a good
reception as it happens and
no doubt made her sausage
toad very tasty!
We had expected the sausage
texture once cooked up to be
slightly course as the
online description had
indicated, however we
thought they were actually
rather smooth-ish to be
honest in our opinion but
they did have a bold herby
peppery flavour. We did also
find that they were quite
“salty” which we thought may
be possibly the added E621
being MSG flavour enhancer.
This wasn’t detrimental but
worth noting. Mind you as a
BBQ sausage for a garden
party or family get together
for example these porkers
would be pretty good.
Eaten cold they were good
too…I finished up a couple
for breakfast sliced up in a
toasted sandwich with a dob
of BBQ sauce 😋
