Mystycroft (Halstead) - Pork & Wild Mushroom

We previously tried the Mystycroft blooming good smokey flavoured sausage with plenty of gogo from good quality ingredients, so lets give these pork & wild mushroom try...

We'd popped over to Halstead Market and met the very nice people from Mystycroft and came away with a few different packs of their produce.

Mystycroft are based at Burtons Green, Halstead, Essex, established in 2009 and rear their own rare breed Oxford Sandy & Black, Large Black, and some Pietrain pigs.  The quality of pork produced is very high and the flavour is exceptional. 

So pork & wild mushroom then...71% pork it says on the label, but I'm sure the percentage is higher. Cooked up they are very succulent too, and flavoursome albeit on the mild side, but with a good bite and chew. Texture-wise, medium and they like the "smokeys" do have a slight crumbliness as you eat which I liked.  The troops here once again concurred, these are a proper sausage!

We will definitely have some more of these..

Here's the sample details:
105x35mm before cooking, 100x33mm after.
88g before cooking, 80g after.
That's a shrinkage of approx 10% & weight loss of approx 9%.
6 sausages approx. 3.93   (7.95/kg)
