We
normally conduct our reviews
on sausage available in the
UK so people can try them
themselves, however this
time here’s a review about
“foreign” sausage for a
singularly significant
reason…
We visited
Neuchatel in Switzerland
recently and I even got
encouragement from my other
half to purchase sausage
from an artisan butcher. I
didn’t need much
encouragement if honest, so
with my best school standard
French I left the shop with
a sausage of sizeable
proportion to cook in our
holiday rental apartment
that evening.
The
SAUCISSE A ROTIR DE PORC
from MARGOT L’Artisan
Boucher was like a big
Cumberland ring sort of
thing, which the translation
has it as a “pork roasting
sausage”. Oh well, we’re
pan frying…
The
sausage did look excellent
in it’s vacuum pack. Good
colour and texture with the
makings being from what we
understood at the time to be
90% pork, with bacon, white
wine, celery, spices and in
NATURAL pork casings. OK yes
as the label says also
antioxidant E300, dextrose,
acidifier E575, and cooking
salt… Interestingly no
mention of rusk or bread so
whether these are gluten
free is a question we ask.
Unwound perhaps the
equivalent of say 7 standard
UK butchers sausages and
weighing in at 628g
according to the label.
Cooking up still in the ring
shape the aroma was very,
very good. The skin browned
really well without any
splits or bursts although it
was a bit of a challenge to
turn in the pan as we didn’t
have any skewers or similar
to keep it from unwinding.
What an excellent
texture though, firm as you
would imagine from a high
percentage filling, but very
succulent and moreish. The
taste was excellent, and I
really mean that. You get
the white wine and herbs
most definitely.
No obvious
shrinkage in the cooking,
but as we didn’t have any
scales, gauging weight loss
wasn’t really possible.
Minimum oil released to the
pan too. It cut really
nicely and the bite/chew was
absolutely the business.
I’ve emailed the shop to ask
a few questions as to source
of pork etc., and I’ll
update the review when
received.
Now we come to the
singularly significant
reason for the review…the
price!
This sausage is the
most expensive by far we’ve
ever paid…22 Swiss
Francs…that’s £20.56 Waaaah! Nearly £3 an equivalent
single standard UK sized
sausage! Yes, and that makes
it an eye watering £32.54 /
kilo….
A blooming good
excellently made sausage,
which it ought to be at that
price. Well worthy of top
marks...
Would we buy
again though? Hmm?? Tempted yes,
it was that good….
