Holme Farmed (Yorks) - Wild Boar

I recall reading in our NFU Countryside magazine late last year about Holme Farmed (Yorkshire) produce, and then seeing a branded pack in our Sainsbury's, it was just too tempting!...

Now we realise that Holme Farmed are all about British venison but they do offer wild boar sausages under their Game Range.  These particular sausages are made with wild boar sourced from the EU and Australia, plus added pork from the EU, but that aside, they actually tasted very good.

60% wild boar with 20% pork, with breadcrumbs in natural pork casings.  Sounds good to us!

Cooked up the texture was close but not too firm.  Very succulent as it happens and the taste was quite porky.  A couple of the troops here say they don't favour overly strong porky tasting sausages but these were "OK this time" for the fussy ones evidently!  I liked them very much...a good "munch"!

Shrinkage was very acceptable but weight loss however was very noticeable.  Given the price per kilo raw then these are not what you'd call cheap, but then again they're a good porky tasting sausage from the Holme Farmed Game Range.

100x27mm before cooking, 90x28mm after.
55g before cooking, 44g after.
That's a shrinkage of 6% & weight loss of approx 20%.
340g pack of 6 sausages £3.50 (offer)  (£10.29/kg)
