Hockings (Ongar) - Pork

Still " the little shop with a big reputation" it would appear from my clients that live nearby in Chipping Ongar.  We visited the shop and it's friendly owner Chris way back in 2013, so I called in again whilst out and about to see what window display he had installed this time...and to refresh our views on the very good Hocking's Porks.

When we were last at the shop the display was a seaside scene complete with sand, miniature people, deck chairs and beach huts...the Christmas following it was a miniature railway scene depicting the Epping Ongar railway possibly...and this week it's an airfield around WW2 time, with miniature aircraft, airmen and vehicles, probably North Weald as it's not far away, mind you neither is Matching Green!  Hockings is known locally for it's detailed window displays and the local town competitions!

So when Chris isn't in the window of the shop being creative he is no doubt out back with the hand cranked sausage stuffer being creative there too.  The Hockings shop is still open 7 days a week so we think Chris may be a workaholic!  For certain he is still very secretive about the sausage recipe.  In the raw the porks do look very good.  Well filled quality natural skins and with "at least" 70% meat we are informed. 

Cooked up they've a light(ish) texture, with a soft(ish) bite and a mild but individual flavour, which on first impression is what you might say was simply OK, but after a couple of bites in our test sandwiches, we're talking a blooming good sausage here.

Visiting Hockings of Ongar yet again was a breath of fresh air...and the experience oozed nostalgia of the old traditional customer friendly way butchers shops used to be.

Nice people who actually want your custom, and good produce too!!

That's a shrinkage of 5% & weight loss of approx 13%.
