Greens (Ingatestone) - Pork

We’ve just sampled probably the finest plain pork sausage in our travels to date, not from a big name in the sausage industry, but from a small family butchers shop in Ingatestone, Essex…

Now don’t get me wrong I’m not saying anything against businesses in to large scale sausage production or in fact the sausage specialist, but it has been an awakening to have tried and really enjoyed a simply special product in our view from a local high street butchers.

Through some networking via Twitter and Facebook and a sausage skin supplier (Smithfield Casings) we became aware of Greens of Ingatestone, and duly added them to our list of producers to visit. Thank you Smithfield Casings…so over to Ingatestone we go!

Well, Martin served us in the shop and was really keen for us to understand that his motto was “These sausages are my flagship”, and added that if his customers didn’t come back for his sausages he really must be doing something wrong!

85% lean pork meat in natural casings, not too tightly packed, and looking excellent in the raw. We were also told due to the quality of the lean meat used in the mix that we should always add some oil to the pan, as “there’s no fat going to come out of these sausages”.

Quite right he was too. They cooked up beautifully, no splits, no pops or spits, excellent. Now the taste was spot on too with just enough spice from Greens own “secret recipe”, a smooth to medium texture and a good bite and chew. Succulent and appertising.

I feel a bit of a div as I didn’t get the individual sausage price because I bought some really nice looking pork steaks along with the sausages. Next time!

Here's the sample details:
115x32mm before cooking, 110x30mm after.
84g before cooking, 76g after.
That's a shrinkage of 10% & weight loss of approx 9%.
