The Goat Shed (Honingham) - Pork
Had a run up recently to do
a delivery just before
Christmas to the Goat Shed
butchery in Honingham, near
Norwich. Yes I was working
but whilst there I thought I
would do a bit of shopping,
speciality cheeses, cold
meats, some seasonal veg all very
nice in time for our family
celebrations...and certainly the
sausages from the butchery
did look pretty good and
made my journey very worth
while...
Mind you I
just didn't have time to
take in their on site cafe
restuarant and it's just as
well as the
traffic on the way back A47
/ A11 was horrendous what
with the roadworks and what
should have taken a couple
of hours or so took a lot
longer than I'd have really wished.
What with Christmas
looming however, the porks did find
their way for a short period into our deep
freeze. Thawed out though a
few weeks later, they did
look none the worse for
wear, so we thought we'd
put them through their
paces.
80% plus Norfolk
pork with gluten free crumb
in natural skins. Yee haa! The pork
comes from Tim Allen
at Morley Farm in South
Creake, North Norfolk (near
the Suffolk border), who we
are told specialises in
high-welfare, outdoor-reared
top-quality pork with
excellent marbling and a
sweet flavour. All RSPCA and
Red Tractor assured. Well that
sounds tip top.
Cooked up the skins browned
exceptionally well with no
splits, bursts or any of
that white elmusion stuff we
occasionally see. The aroma
from our pan frying of them
was very good too I might
add.
Texture-wise
just on the smooth side of
medium which was very good.
The general seasoning was
spot on for us and yes there
was a sweetness as it
happens. The flavour was
mild though which was liked
by others here but I felt
that these sausages did lack
just a bit of spice for me
personally. The bite
and chew was good though.
Decent skins and top quality
pork does make a difference.
A little bit of
shrinkage in the cooking,
and yes a little weight
loss, but a very nice plain
pork Gluten Free sausage that I'm sure
you will like.
So,
well, we certainly liked
these and we would definitely
buy again when up Norwich
way.
