Foxholes (Hertford) - Pork & Country Herb

Nice looking sausages from a local farmer and producer! Not keen on only 5 in pack though...mind you they're good tasting sausages!...

Foxholes Farm is on the outskirts of Hertford, just off the A414 / A10 and produces sausages from their own saddleback pigs! The pigs are all free range too so the quality of pork I'm sure will be good. The farm shop has all sorts of food goodies available and would be well worth a visit if you're over that way.

Good looking 80%+ meat sausages in the raw, mind you the fine natural skins were a bit "baggy" on inspection. Cooked up though, no problems. Medium to coarse texture, browned nicely, and mores the point tasted very good. The spice was just enough to give a good flavour and not too much so that you get an overly herby aftertaste. The bite was good and texture spot on.

Shrinkage and weight loss though, noticeable. Mind you served straight from the pan with some nice home made chips this time instead of the normal mash etc., was the business!

A proper good sausage. .

110x30mm before cooking, 100x30mm after.
73g before cooking, 62g after.
That's a shrinkage of 9% & weight loss of approx 15%.
364g pack of 5 sausages £3.26 (£8.95/kg).
