Farrowby Farm (Hinxworth) -

We visited a Food Fayre
locally the other day and
there was a very friendly
stallholder with
sausages...just too much
temptation to resist...so
some Farmhouse Porks from
Hinxworth will be next...
Farrowby Farm, Hinxworth is
just off the A1 south of
Biggleswade in the county of
Hertfordshire. Free range
pigs and poultry, tea room
and other open farm
interests are offered. Bacon
is "as it used to be" we're
advised, so here's looking
forward to tasting these
sausages then!
70% pork meat with some rusk
and spices go in to these
farmhouse sausages. The lady
at the food fayre apologised
but couldn't confirm what
the casings were, but we'd
say they were reasonable
quality natural ones from
inspection.
Quite a small sausage in the
raw however they "plumpted"
up and cooked very nicely!
Now we do like "big and
bold", but there's a place
for "small and subtle" when
it comes to good sausages.
Little overall shrinkage and
weight loss, and minimal oil
residue in the pan. One of
our samplers was most
complementary about these
being "meaty" as she
devoured and munched one in
a sandwich, and I tend to
agree. The flavour was good
with a small amount of
lingering spice on the
tongue. Texture was smooth
to medium with a good meaty
bite. These are a proper
job!

That's an overall shrinkage of 0% &
weight loss of approx 7%.
