The Farm Butchery shop is
towards the North end of the
High Street, Codicote. We
called by on the way back
from Knebworth, yes a round
trip but we'd heard that
sausages from here were
worth trying. We hadn't
intended to make a second
sausage purchase of the day
after the somewhat large
meat purchase at Knebworth,
but hey...
The Farm Butchery say they
use 100% British pork, but
the butchery assistant
wasn't able to tell me from
where exactly unfortunately.
From their web site we note:
"When we took on our
butcher’s shop back in 2017
we were told "to be a
success you need to have a
good sausage" and we
couldn’t agree more! All our
sausages are lovingly made
in store, by our very own
hands! We select the right
cuts of pork and combine
with the right ratio of fat,
rusk and water before
blending with various herbs,
spices and other ingredients
to provide a range of
delicious, flavourful
sausages."
We'll give them a go shall
we...70% pork meat with
gluten free breadcrumbs
and spices go in to these
sausages. Natural casings
that look reasonable
quality from
inspection too. Sounds OK.
Right, cooked up, nicely
browned, skins held well but
taste-wise I'm sorry to say
they were very plain.
Texture-wise medium, meaty
and the bite and chew good
too.
Now we're a family that
doesn't over salt and
season, but these did need
more to be enjoyed to be
honest. Perhaps a mixing
problem when making?
The were OK but we wouldn't perhaps buy
these again.

That's an overall shrinkage of 8% &
weight loss of approx 6%.
6 loose sausages (446g) £4.37
(£9.79/Kg (approx)).
