DS Eagle (Writtle, Essex) - Pork & Herb

Well yet another very good sausage to follow the Venison from DS Eagle. As we said in a previous article, I happened to be working close to Writtle in Essex just before Christmas and from a friends recommendation we found the butchers shop on a small parade in the middle of a housing development in Writtle.

Pork and herb sausages sound good to us and certainly with the butchers confirmation of them containing local Essex pork at 80% lean in natural skins and at the very reasonable cost of £8 / Kg or there about is a "no brainer" in our books.

The venison sausages were excellent so we had great expectations about these pork and herb delights. I will admit (once again) they did have just short of a spell in the polar arctic of our deep freeze over the Christmas week, but once again I can confirm that they thawed nicely and looked pretty good for the experience!

We understand that many people choose to oven cook their sausages but we pan fry our samples regardless of supplier so we can be consistent ourselves with the cooking and yes we have heard of air fryers!

They cooked up quite firm and with absolutely minimal oil left in the pan afterwards. No splits or bursts. Shrinkage and weight loss in cooking was minimal also.

Texture-wise they were smooth to medium, and taste-wise very "herby". Rosemary and thyme we'd say in abundance, but they were quite salty which was a shame really. As a family we don't use salt like we used to so perhaps we noticed the level, perhaps others would not.

Suffice to say, these Pork & Herb were a very well made sausage at a very reasonable price that you really ought to try yourselves.

Would we buy them again? Of course, yes!

That's an overall shrinkage of 4% & weight loss of approx 7%.
