What
a find, yet another top
sausage! We received
an email from a Jon Michaels
recently kindly directing us
to Burton & Sons. As
it happens, I found myself
visiting a client not too
far away, so I made a point
of calling in...
Having bought some excellent
looking King Street
sausages, some equally good
chipolatas, and a couple of
Sheftalia (about which there
will be separate reviews for
sure) during a good chat
with the very friendly
butchers, I returned to the
office for a fact finding
cook up!
Burton's is a family run
retail and catering butchery
business, headed by Andrew
Burton a Liveryman of the
Worshipful Company of
Butchers. The shop is
located in the heart of the
historic market town of
Saffron Walden, Essex, at
the corner of King Street
and Market Passage. A
very popular butchers shop
too in a very accessible
town centre location I hasten to add.
I'm informed quite proudly
that the 80% pork used is
top quality and comes from
Blythburgh Pork, whom we recognise
as a very well
respected supplier based in
Suffolk. The
casings too are all natural
and from the look of the
sausages in the raw, they
are top quality too.
King Street sausages have a
touch more seasoning and
spice added than the
Traditional sausage we're told.
Looking very good so
far...so let's cut to the
chase...
Well, cooking up (we pan fry
our samples as you are
probably aware) the skins
tightened down and browned
really well with no splits.
Minimal residual oil in the
pan remained, and definitely
none of that horrible white
stuff leaking out that we
see from so many sausages
these days!
Taste-wise these King Street
sausages are excellent.
Yes a touch more seasoning
and spice, which really
works. The level of lingering
spice taste on the tongue
was lovely. The skins cook
well and give a good bite.
The texture of the filling
is medium and
holds well when being cut.
Award winning sausages, we
should say so.
We sampled these as part of
a sausage and mash, which
went down really well.
Thumbs up all round. Definitely a super sausage
in all respects.
We would agree with Jon
Michaels, these sausages are really worth
a try…and take it from us,
you'll like these!
