Churchgate (Old Harlow, Essex) - Naga Chilli

Let's not mess about here...just as Jason Drage has said himself, "jeez these are hot"...but wholly delightful!  Even eaten cold later, these are a serious experience!

Developed by the Churchgate Sausage Company from an idea from one of their customers, these sausages use good quality pork infused with a good measured quantity of Mr Naga's Chilli Pickle!  Other makers use off the shelf chilli flavouring, but not here.  Creativity rules!

We've tried big chilli sausages before, but these are really not pain, heartburn and stinging lips.  There's a smoky deepness to the flavour in there that is really satisfying.  Mind you even after 2 cups of tea afterwards I was still unable to taste the tea..!

Mr Naga Chilli Pickle is VERY HOT and aromatic, and is the result of  blending the heat of the Naga Morich (Chilli) one of the hottest you can get, with a mix of spices to create an incredible chilli paste.

As we've said many times, Jason really knows his stuff about sausage making, and these sausages are certainly a master piece. However they were a little too hot for some of the "girlies" here unfortunately. I liked them a lot, but I agree they are a tad on the hot side...

We tried these both pan fried and barbequed, with both methods producing a really good tasting result that you really should try at least once!

Here's the sample details:
110x33mm before cooking, 105x33mm after.
86g before cooking, 80g after.
That's a shrinkage of 4% & weight loss of approx 8%.
